Students share their favorite holiday foods

One big part of the holiday season is food. Students were polled on the Pony Express Instagram (@ponyexpresssmhs) on what common holiday foods they preferred.

Sophomore Beyci Gonzalez shares her family tamales recipe. This family recipe came from Beyci’s grandmother, who makes it during Christmas time. Her favorite memory was when she taught Beyci how to make this when she was younger.

Ingredients: chilis, meat of choice, onion, 3 garlic, cumin, cup of havina, salt, salsa, morclar mazeca, rice flower, baking powder, butter, mezilar, corn leaves

1. Put chilis in hot water for 1 hour

2. At the same time, cook meat with onion, for 1-2 hours, then save broth

3. Blend chilis with 3 garlic

4. Mix cumin, cup of havina, salt together

5. Shred meat and mix with salsa, then add spices and chili

6. Mix morclar mazeca with rice flour and baking powder together

7. Add juice from broth and mix butter – add little by little and add mezilar

8. Add corn leaves in hot water and when softened add meat, then cover

9. Cook in steamer for 1 hour 30 minutes – to check if ready peel maza completely off

Sophomore Zoey Lauritzen shares her holiday recipe from her grandmother. Every year, her grandma made pumpkin cheesecake, and Zoey said growing up, it was one the things she most looked forward to during the holidays.

Ingredients: 3 packages of cream cheese, 1 ½ cups brown sugar, can of pumpkin pie mix, 4 eggs, 1/4 cup sour cream, 2 tablespoons flour, 2 teaspoons pumpkin pie spice, 1 tablespoon vanilla extract, store bought pie crust

1. With a mixer, beat softened cream cheese and 1 ½ cups of brown sugar until fluffy.

2. In a separate bowl, whisk pumpkin pie mix, 4 eggs, 1/4 cup of sour cream, 2 tablespoons of flour, 2 teaspoons of pumpkin pie spice, and 1 tablespoon of vanilla extract.

3. Then, add the other mixture and mix until it is combined.

4. Put the filling onto a store bought pie crust and back in the oven at 350 degrees F for about an hour.

5. Leave it out to cool, then put it in the refrigerator
